Creamy horseradish soup

Ingredients:

– 1.5 kg potatoes

– 1 l chicken stock

– 4 finely chopped spring onions

– 2 garlic cloves

– 3 dl cream

– 40g butter

– 4 tbsp Tormaricum horseradish cream

– 6-7 slices of bacon

Preparation:

Peel the potatoes, cut them into cubes and cook them in the chicken stock until soft. Once the potatoes are fully cooked, process them in the stock with a hand blender until creamy. Melt the butter in a saucepan, add the grated or crushed garlic, then add the cream. Add the 4 tablespoons of Tormaricum horseradish cream, the finely chopped spring onion, salt and pepper, and cook over low heat for about 25 minutes. Add the horseradish cream mixture to the potato stock and process until creamy using a hand blender or blender, then cook for another 5 minutes. If it is too thick, add more water or stock to taste. Serve with crispy bacon crumbs when serving.
